But now it's time to get out of holiday mode (maybe just a little) and do your menu plan for the week. I can't stress how important it is to menu plan over the festive season, when you just don't need any more things on your to do list. Even if you plan it really lossely, or just plan a few days... something is better than nothing, and will make a huge difference to your stress levels (plus give you more time and money, crucial at this time of year!).
T and I are sick this week though, hence the late menu plan. We're feeling pretty sorry for ourselves, but we still need to eat! As such, the first half of the week features a lot of soup!
Without further ado, here is this week's menu plan.
Tuesday
lunch: pumpkin, corn and ginger soup (based on EDC pumpkin soup recipe)
dinner: watermelon & tomato gazpacho (rawlicious cookbook)
Wednesday
lunch: bean and tomato soup
dinner: leftover pumpkin, corn and ginger soup
Thursday
lunch: leftover watermelon and tomato gazpacho
dinner: leftover bean and tomato soup
Friday
dinner: red cabbage, parsnip, orange and date salad with steaks
Saturday
dinner: cheese and rosemary polenta chips with tomato sauce and veg
Sunday
dinner: pine needle-infused fish with crustless spanakopita
I haven't planned a lot this week - no essentials or anything. I just don't know how I will feel, so I'll take each day as it comes. But I'm so glad to have all our dinners and most of our lunches planned!

Thanks, Jo! I'm starting to feel a bit better - soups are definitely helping. The watermelon & tomato gazpacho was so yummy! Very summery, that's for sure. The raw onion didn't sit too well with me, though... Next time I might add mint instead.
